It is often said that homemade cakes in Dubai feel softer and moister than the ones picked up from a shop shelf. There is real truth in it, and it is not magic: a cake baked by hand, to order, for one family at a time is not designed to sit and wait for days.

I am Juliette, a Cuban baker working from home in Dubai, and in my own captions I write "bizcocho húmedo", which simply means moist sponge. Today I want to explain where that moisture comes from, how to keep it in our heat, and how to choose a cake that stays tender until the very last slice.

Why homemade cakes in Dubai are often moister

Baked to order, not baked to wait

Everything I make is baked to order. A sponge is at its loveliest in the first days after baking, when the crumb is still soft and the filling has just settled into the layers.

A cake made to stand in a display fridge has a different job. Cold, dry air slowly pulls moisture out of an uncovered sponge, and a cake built for a long shelf life often has to give up some of its tenderness along the way.

Small batches, full attention

I bake in small batches, by hand. For handmade cakes in Dubai, that is the real advantage: each sponge gets attention, the batter is mixed with care, and the cake comes out of the oven when it is ready, not when a schedule says so.

It sounds like a small thing, but a few extra minutes in the oven is the most common reason a sponge turns dry. Baking a little at a time is what lets me be careful.

Fillings that keep the layers soft

The sponge is only half of the story. My vanilla sponge cake is filled with dulce de leche and finished with ganache, and both of them matter for moisture.

The dulce de leche keeps the layers soft and creamy, and the ganache wraps the outside of the cake. That coating helps hold the moisture inside, which is exactly what you want in a warm city.

What dries out a sponge

If you have ever bitten into a crumbly, dry cake, one of these was probably the reason:

  • Over-baking. Even a few minutes too long takes away the softness.
  • Too much flour. A heavy hand when measuring makes a dense, dry crumb.
  • Sitting uncovered. A cut cake left open in the fridge dries at the edges very quickly.
  • Too much time between baking and eating. Freshness is the simplest secret of all.

  • Travel with the air conditioning on. Carry the box flat on the floor or seat of the car, never in a hot boot.
  • Cover the cut side with cling film after the first slices, so the sponge does not dry out.
  • Avoid long outdoor display. If you are celebrating on a terrace, bring the cake out just for the candles and the photos.
  • Plan ahead. Order at least 48 hours in advance, and give custom cakes 3 to 5 days.
